I wanted to look at blending bush foods (traditional) with western cuisine. The idea was to use Davidson Plums in a cheesecake mix. I used frozen plums in the cheese mix and sprinkled dried plum powder across the top, where normally I might have put grated chocolate. Sprinkling across the top was an option for those who really like the bite of plums. Taste tested with one of my indigenous colleagues, ta da! We are going to have it on the menu of the first post-Covid dinner evening next week. So when we run out of frozen fruit, we will still have an offering with the freeze dried mix.
