Lime and Pepper Salsa
If using one native ingredient is great, using two is even better! Salsa is a favourite for enjoying with a crowd, taking to a family gathering or sharing with friends at a potluck. Especially when it is infused with natives! And one of the best things about native ingredients is they integrate seamlessly into dishes you may already make, or foods you already love. In this salsa for example, the Finger Lime replaces the traditional squeeze of fresh lime, while the pepperberries help add the spicy, peppery kick you expect in salsa.
2 truss tomatoes, chopped
1/2 cup canned, diced tomatoes, lightly drained
1 tsp Finger Lime powder
3-4 Mountain Pepperberries, ground
1 tsp Apple Cider Vinegar
1 tbsp each, chopped red and green capsicum
1 tsp jalapeno, chopped
Salt to taste
- Combine all of the ingredients in a bowl and stir together. Adjust to your heat preferences by adding more jalapeños or chilli powder.
- Enjoy with nachos, on Mexican dishes, or as a topping for your favourite roast vegetables.
And if you want to add a little extra salt or mountain pepper to your salsa – or other dishes – mountain pepper can be used in your pepper grinder in place of traditional peppercorns!
