Mountain Pepperberry Sweet Potato Toast with Lemon Myrtle Avo Smash

While the origins of Smashed Avo are debated, its link to Australian chefs is undisputed. And what’s more Aussie than Australian native ingredients? So we decided to enhance this brekky delicacy by combining two of our favourite native, Lemon Myrtle and Mountain Pepperberry.

Lemon Myrtle

Considered the “queen” of the lemon herbs, Lemon Myrtle is undoubtedly one of the most popular Australian native herbs. It has a fresh aroma of citrus, with delicate menthol essence and a strong lemon flavour, which is sweet and refreshing.

Mountain Pepperberry

Substitute traditional pepper with Mountain Pepperberry for a hotter, more peppery punch. The pepper berry is known for its ‘hot’ flavour due to the polygodial properties. They are fruity upon first taste, followed by a spicy flavour.

Serves 4 (2 pieces per person)
Time: 20 minutes

Ingredients:

Mountain Pepperberry Sweet Potato Toast

• 2 large sweet potatoes
• 2 tbsp EVOO
• 1 tsp Mountain Pepperberry
• 1/2 tsp sea salt

Lemon Myrtle Avo Smash

• 2 large ripe avocadoes
• 1 lemon, juice only
• 1 tsp Lemon Myrtle
• 1/2 tsp Mountain Pepperberry, coarsley ground
• 1/2 tsp sea salt

To serve

• 100 grams goats cheese feta
• Pepita seeds, toasted
• Snow pea sprouts
• EVOO

Method:

Mountain Pepperberry Sweet Potato Toast

1. Slice sweet potato into 5mm slices lengthwise.
2. Combine EVOO, Mountain Pepperberry & 1/2 tsp sea salt in a small bowl. Using a pastry brush, brush each side of the sweet potato slices lavishly.
3. Heat toasted sandwich maker and cook the oiled sweet potato slices in batches until toast sweet potato until golden, crisp and tender.

Lemon Myrtle Avo Smash

4. Roughly smash avocado with a fork. Stir through lemon juice, Lemon Myrtle, Mountain Pepperberry and sea salt in a small bowl.
5. Top each slice of sweet potato toast with a healthy sized serving of smashed avocado.

To serve

6. Top with crumbled goats cheese feta, toasted pepita seeds and snow pea tendrils. Delicious with a little crispy bacon on the side
