- Preheat oven to 150°C. Line baking trays with baking paper.
- In a small saucepan heat the butter and golden syrup until the butter has melted. Set aside to cool.
- In a large bowl combine the flour, sugar, coconut, Wattleseed and oats then stir in the cooled butter mixture. Combine the bicarbonate of soda and boiling water and immediately stir through the oat mixture.
- Scoop spoonfuls of the mixture onto your prepared baking tray and bake for 20 minutes or until golden brown. Remove from the oven and transfer to wire racks to cool until crisp.
