BBQ PRAWN AND PINEAPPLE SKEWERS
This is the perfect recipe for Summer. Bright, crisp and healthy. The salsa will taste very fresh and have a hint of bitterness in the aftertaste, which is perfectly balanced with the caramelised sweet pineapple on the skewers. Seriously yum!
- Start by making your salsa. Place everything into a food processor or blender and pulse until combined. You can leave it chunkier if you prefer or pulse further to thin out. Adjust water and olive oil to your preference.
- Place 2 prawns and a chunk of pineapple onto each skewer and place them onto a plate. Sprinkle over Old Man Saltbush. Heat BBQ grill very hot, then carefully place skewers onto grill. Cook until the prawns turn orange and the pineapple begins to caramelise then turn them and cook again until the entire prawn is orange.
- Serve skewers hot with salsa drizzled over the top.
